, emailed me a bunch of low calorie/diabetic recipes, and this was the first one I tried. It is now a family favourite!
6 boneless skinless chicken breastsDIRECTIONS
1/4 cup orange juice
2 tablespoons fresh lime juice
2 tablespoons mango chutney
2 teaspoons grated fresh ginger
1 tablespoon olive oil
1/2 teaspoon hot pepper sauce
1 teaspoon minced fresh oregano
2 garlic cloves, minced
Combine the chicken breasts with all remaining ingredients. Place in the refrigerator and marinate overnight.
The next day, prepare an outside gas grill with an oiled rack set 6 inches above the heat source.
Set the grill heat to medium. Grill the chicken breasts for 6 minutes on each side until the chicken is cooked through.Per Serving (3-4 ounces): Calories: 162, Fat: 4 g, Cholesterol: 73 mg, Sodium: 71 mg, Carbohydrate: 3 g, Dietary Fiber: 0 g, Sugars: 2 g, Protein: 27 gEnjoy!
