A little intro...
I bought a mini bundt pan from Ashton Green, and wanted to make a pretty dessert that would easily serve just 2. I halved the following recipe and it worked out nicely. I will give you the original recipe which yields a 7” (18cm) cake, or 4 individual cakes using the mini bundt pan. You may need to increase the bottom layer ingredients to fit into the bundt pan moulds. I used about 1/3 cup butter, 1 1/4 cup graham cracker crumbs, and 2 tablespoons packed brown sugar. You will also have to reduce the cooking time of the bottom layer to about 4 minutes. Also, be sure to reduce the cooking time of the cheesecake and check it at about 20 minutes.
