Carrot Cake with Cream Cheese Frosting

I went and made those Blonde Brownies two days ago and totally forgot that I had to make a Birthday cake. I didn't forget it was my husband's birthday, I just had a total brain fart about the cake. I couldn't not make the cake, birthdays need cake... even if he was working :/ Since there would be 2 deserts in the house I asked him what kind of cake he would like. He chose carrot cake, and it came out awesome. The recipe follows the picture.



I also made a big roast beef dinner and had that for supper in his honour. He went to the mall to get a sub for dinner...hehehehe Well, we both enjoyed his B-day dinner today with a nice bottle of wine. There are still a lot of leftovers.
