Doubly Chocolate Cookies

These cookies were excellent! It's a double chocolate recipe, but I chose this one because I wanted something chocolatey, but didn't have chocolate chips, so we made chocolate peanut butter chip cookies. They are very moist, soft, and brownie-like. Holy freakin' awesome stuff! Normally I use real unsalted butter for baking, but I didn't have any so I used the cheapest margarine ever and they still turned out so so sooooo good!

Doubly Chocolate Cookies
Yield: about 4-1/2 dozen cookies (I got exactly 5 dozen)
INGREDIENTS
DIRECTIONS
Heat oven to 350°F (180°C).
In large bowl, beat butter and sugar until fluffy. Beat in eggs and vanilla until creamy.
In medium bowl, mix together flour, cocoa, baking soda and salt. Gradually add to butter mixture, beating well. Stir in semi-sweet chocolate chips and nuts, if desired. Drop by rounded teaspoons onto ungreased cookie sheet.
Bake 8 to 10 minutes or just until set. Cool slightly; remove from cookie sheet to wire rack. Cool completely.

- 1 cup butter or margarine, softened (I used cheap margarine with fantastic results)
1 1/2 cups granulated sugar
2 eggs
2 teaspoons vanilla
2 cups all-purpose flour
2/3 cup cocoa
3/4 teaspoon baking soda
1/4 teaspoon salt
1 package (350 g / 2 cups) CHIPITS® Semi-Sweet Chocolate Chips (I used a bag of CHIPITS Peanut Butter Chips)
1/2 cup coarsely chopped nuts (optional) (I did not use)
