Coffee Fingers
This recipe is from Jean Paré’s Company’s Coming "Most Loved Cookies."
Yield: 4 dozen (48 fingers) - I got about 46 cookies!
INGREDIENTS
- 1 cup hard margarine (or butter) softened (I used butter)
1/2 cup packed brown sugar
1 large egg yolk
2 cups all-purpose flour
1/4 cup icing (confectioner's) sugar
1 teaspoon instant coffee granules, crushed to fine powder
1 large egg white
1 1/2 cups finely chopped walnuts or your favourite nuts (I used pecans)
DIRECTIONS
Preheat oven to 300° F.
Cream margarine and brown sugar in large bowl. Add egg yolk. Beat well.
Combine flour, icing sugar, and crushed coffee granules in medium bowl. Add to margarine mixture in 2 additions, mixing well after each addition until no dry flour remains.
Divide dough into 2 equal portions. Shape each portion into 6 inch (15 cm) long log. Roll log on lightly floured surface to 4 x 6 inch (10 x 15 cm) rectangle, about 1/2 inch (12mm) thick. Cut into 1/2 x 2 inch (1.2 x 5 cm) rectangles.
Fork-beat egg white in small bowl. Put walnuts into separate small bowl.
Dip each rectangle in egg white until coated. Roll each in walnuts until coated, shaping into finger as you roll. Arrange about 2 inches (5 cm) apart on greased cookie sheets. Bake for 20 to 25 minutes until golden.
Let stand on cookie sheets for 5 minutes before removing to wire racks to cool. Repeat with remaining log, egg white, and walnuts.
