I got the urge to make doughnuts last night. I don't know what came over me. I've never made them before, but I just had to try. And OMG these were the BEST glazed doughnuts I've ever had. Ever. My husband thinks so too. I'm defintely filing this recipe away.

Homemade Glazed Doughnuts
Homemade Glazed Doughnuts

On Monday I sent my husband to work with Chocolate Chip Cookies. This morning he took this container of Doughnut Holes.

Glazed Doughnuts

Yield: 48 doughnuts

INGREDIENTS FOR DOUGHNUTS
    2 cups scalded milk
    1/2 cup butter
    2/3 cup sugar, divided
    1 teaspoon salt
    2 tablespoons yeast
    4 eggs (beaten)
    1/4 teaspoon nutmeg
    7 cups sifted flour

DIRECTIONS

Melt butter in hot milk, add 1 tsp sugar and salt. Allow to cool.

Beat in yeast, nutmeg, eggs, remaining sugar, and 3 cups flour. Add rest of flour (dough will be sticky). Knead for 5 minutes then allow to rise for 1 to 1 1/2 hours.

Roll out dough, cut into shapes, then allow to rise for 30-45 minutes. Do not re-roll dough. (You don’t need a fancy doughnut cutter, just use 2 different sized glasses, or biscuit cutters. I cut up the leftover bits into odd shaped doughnut holes.)

Heat oil to 365°F and fry 1 - 2 minutes on each side or until brown.

Let them rest on a paper towel. Dip in glaze while still slightly warm.

Doughnut Glaze

INGREDIENTS FOR GLAZE
    1 cup of butter, melted
    1 1/2 teaspoons vanilla
    5 cups of icing/confectioner’s sugar
    4 tablespoons water

DIRECTIONS

These measurements are all approximate. I used a glaze method that my husband showed me when he made scones.

Mix the first 3 ingredients together in a bowl (big enough bowl to dunk and coat your doughnuts). Add the water last, and add just a little bit at a time. You want your glaze to be runny.

You can reuse the glaze that runs off your doughnuts. You can let them rest on a wire rack and catch the drippings underneath.

Ok blame it on my Britishness but what is scalded milk, I mean is it something you can buy over there or do you literally scald the milk?

It means to literally scald it - bring the milk to almost a boil. Though I read that it really isn't necessary today with pasteurization. What I did in this recipe was just warm the milk enough to melt the butter and dissolve the sugar.

Oh my goodness. It's really a shame that Jarrett is on a diet and I'm *attempting* to eat healthier...otherwise those would be made already. LOL! I've saved the recipe for later though. :)

Those look delicious. I've made homemade donuts only once- in Home Economics class - and they were so yummy.

and your own donuts! I love this even more. It's a shame both of my housemates are trying to lose weight. (oh yeah...technically I'm trying to lose weight too)
